Where does the time go?

Can you believe this year is more than half over already?  How are you doing on those New Year resolutions?  Would you believe that as of this writing, there are only 154 days left until Christmas???

With all that being said – have you made your 2024 vacation plans?  Whether or not those plans involve us (and we hope they do!), take the time to make those reservations… because this year certainly isn’t getting any longer!

And we know there’s no way that we’re listing them all – but here’s a quick recap of some of the ones that we’ve highlighted that remain on the calendar!


One new entry to add to the list – Port Gamble confirmed the dates of their Ghost Conference this year – it will be November 8-10th.  We will be offering a 10% discount for conference attendees (use the promo code GHOST when making your reservation – 3-night minimum stay required), but with us being only six minutes away from the conference, we expect to sell out early!

Speaking of timing...

Recipe Corner - Adrian's sweet potato, apple, bacon, pork (or turkey) hash

Serves 2 (large portions!)

Ingredients
1 golden sweet potato, diced in 3/4” cubes
1/2 Fuji apple diced
1/2 Golden Delicious apple diced
1/2 yellow onion diced
4 slices bacon, sliced lengthwise and diced
6 oz pulled pork (diced or shredded) OR 6 oz smoked turkey (diced)
1/2 cup avocado oil
2 tsp salt
1 tsp black pepper
1 tsp sage
1/4 cup maple syrup
2 eggs (duck preferred)


Recipe
– Heat the oven to 400F
– Toss the diced sweet potato in the avocado oil and 1 tsp of salt. Arrange in a single layer on an edged baking sheet and place in the oven for 20 minutes.
– While the sweet potato is baking, cook the bacon in a large cast iron skillet over medium heat until it begins to render fat, about 5 minutes. Add the onions and cook, stirring regularly, until they begin to turn translucent, about 5-6 minutes.
– Add the apples and cook for an additional two minutes, stirring regularly.
– Add the pork or turkey and cook for 5 minutes, adding sage, 1 tsp salt, and 1 tsp of pepper and stirring well.
– Add the baked sweet potato and mix gently to not break the yam cubes. Pour maple syrup over the top and mix it in.
– Using the back of a ladle make 2 spaces in the mix, equally spaced around the top.
– Gently crack an egg (without breaking the yolk) into each space. Place the skillet in the oven for 12-15 minutes until the eggs are cooked. The yolks should still be liquid and the whites not quite solid so that the egg can be mixed into the hot hash to finish cooking.

Serve each serving using a ladle into a pre-warmed dish. Top with a drizzle of sriracha (we use Shark brand from Sriracha province in Thailand).

Notes:
– Sweet potatoes are also called yams, depending on where in the country/world you happen to be
– This can be made in to a vegetarian dish by simply eliminating the meat (full disclosure: the picture is of a vegetarian version Tracy made for recent guests)
– Chicken eggs can be substituted for duck eggs if you aren’t lucky enough to have access to duck eggs
